Afgo Lemoni - My Dad's Favourite 'Fix'

The recipe is a Cypriot version, it can be varied, add vegetables, small bits of pasta instead of rice if you want, but you will find this so lovely maybe you will decide to leave well alone. I made this soup as part of my rehabilitation programme and everyone loved it!


  • 8 chicken thighs, (on the bone)
  • Chicken stock, (1 litre, the real stuff or with a stock cube, it will still be delicious)
  • 2oz rice
  • 2 eggs
  • 2 lemons
  • 2 - 3 bay leaves
  • Any Mediterranean herbs you have to hand, (fresh, dry it doesn’t matter)


  1. Cook the chicken thighs in the stock with the herbs and bay leaves

  2. When the chicken is cooked, (around 30 – 40 mins) add the rice, it will take another 10 minutes or so for the rice to cook

  3. In a separate bowl whisk the eggs with the juice from both lemons

  4. When the rice has cooked, take a ladle full of the soup mixture and whisk into the egg and lemons. Repeat this before adding it back into the soup

  5. Stir well and serve with crusty bread

This soup makes a filling meal. Ever since I can remember there would be a pot of this on the go. My dad called it the “fix it soup”, because it had everything that you needed in it. If we had a cold, bowl after bowl would be produced. I asked dad why he called it “fix it soup”. I was quite young at the time and teasing me was easy.

“Well it fixes everything,” he would explain.

“Like what?” I asked.

“Well broken legs and arms, if you fall over and hurt your knees and elbows, it will make them better very quickly. Even if you are in a bad mood, or slightly mad, it will fix that too”.

Of course at the time I believed him and drank mountains of it. It was only later in life I realised that he had been teasing. I told him this and he laughed, saying that it was still a good health soup, a comfort. I used the same tactics with my daughters, it works and they love it!
