Chicken Liver Salad

Healthy, quick and simple,the perfect dish to set up the rest of the meal. What more could you want from a starter? This dish always goes down well with those in the residential rehabilitation program and is often taken home to be tried with family.
Ingredients
- Half a pound of chicken livers
- A dash of Worcester sauce
- A knob of butter
- Salt and pepper
- A dessert spoon of Olive oil
- A teaspoon of orange juice
- A couple of handfuls of Rocket
Directions
Wash and chop the chicken livers, (removing any veins)
Put the butter in a frying pan with the salt and pepper. Allow the butter to melt on a low heat, the butter must not burn
Fry the livers in the butter, only for a couple of minutes; you want them to be soft and a tiny bit pink
Half way through frying dash with the Worcester sauce
Toss the chicken livers into the Rocket. Add the olive oil and orange juice
Serve up warm with bread
