Luxury Fish Pie

If you are going to have a fish pie, make it a luxury one. This dish was cooked by one of our private rehab residents many times, but the most memorable was when she cooked it for her sister and the sister’s family. She was back in the UK for a visit to her mother who had taken ill, so she was staying with her sister on her farm. The pie took ages to make, but shouldn’t really take that long, it’s a fairly quick dish. At one point it ended up on the floor, but what the eye doesn’t see, (!!), it didn’t ruin the flavour and no-one was ill. Dropping on the floor isn’t included in this recipe, just don’t worry about it if you do!

 

Ingredients

  • 1lb of potato
  • 1lb of firm white fish
  • 20 prawns, (uncooked and peeled)
  • 4 ounces of smoked salmon
  • 1 pint milk
  • 1 ounce of corn flour
  • X3 good knobs of butter
  • Teaspoon of tarragon or dill
  • Quarter pound of mushrooms
  • Sliced spring onion

Directions

  1. Boil the potatoes and mash with a little milk and i knob of butter until creamy. Season to taste, (you can add some grated cheese if you want but it’s not essential).

  2. Make a béchamel sauce by slowly melting another knob of butter in a pan with the corn flour. When the flour and butter starts to bubble add the milk little bit by little bit, the mixture will go doughy at first, this is fine, keep stirring, by the time you have added all the milk you will have a nice creamy sauce.

  3. Add the mushrooms and cook for another five minutes on a low heat. Blitz the sauce, taste, add salt and pepper if you want.

  4. In an oven proof dish arrange the white fish, prawns, smoked salmon, spring onion and sprinkle with the tarragon or dill, break the final knob of butter into bits and scatter on top of the fish.

  5. Pour over the mushroom sauce then spread the mash potato on top. Cook in a medium oven for about 30 mins, you will see the sauce bubble under the potato.

  6. Brown under the grill if necessary. Remove, (drop now if you are going too, scoop back up) and serve.
