Paprika Chicken With Mash - Comfort and Warmth

This combination of the creamy chicken and soft mash really is a great image of home and wholesomeness.

This was made for six people at Los Olivos private rehab clinic. It is great served with a salad; lettuce, onion, avocado and beetroot with an olive oil and lemon dressing. Enjoy


  • 6 Chicken fillets
  • 1/2 Pound of finely chopped mushrooms
  • 1 Pint of cream
  • 2 Dessert spoons of cornflour
  • 2 Oz butter
  • 3 Cloves of crushed garlic
  • Garlic salt
  • Plenty of paprika (enough to cover each thigh)
  • Worcester sauce
  • Seasoning
  • Potaoes, butter and milk


  1. Make a creamy mushroom sauce by melting the cornflour with the butter and seasoning. Over a gentle heat slowly add the cream to the butter/flour mix, stirring all the time. Initially the flour mix will form a ball, don’t panic just keep adding cream and stirring

  2. Once all the cream has been mixed in add the mushrooms and continue stirring until you have a nice thick sauce. Leave to one side. Cover your work surface with the paprika, crushed garlic and garlic salt

  3. Roll your chicken fillets in this mixture, making sure they are completed coated. Place the fillets in a dish, a single layer, don’t pile them

  4. Blitz your cream and mushrooms and then pour this over the chicken. Seal the dish with a lid or tin foil and place in a pre-heated oven (gas mark 4 or equivalent)

  5. After one hour check the dish, add a dash of Worcester sauce and some more cream if necessary. Return to the other for at least another hour. Meanwhile peel, wash, chop and boil your potatoes. When cooked drain and mash with butter and milk.

    It’s all ready to serve!

This dish for me means comfort and warmth. I love cooking this dish for others on a winter night and sharing it with them. My mum used to do that for me, it would bring us together. We’d share our troubles or stories from the week or what was just bugging us. Dishes like this one made meal times at home fun and enjoyable. Now I carry on that feeling my mum gave me by cooking this hearty meal for others who I care for.
