Salade Nicoise

A great dish to throw together for a few friends coming round. It’s easy to do, involves little actual cooking! But lots of creativity, colour and fresh tastes. You don’t usually have cheese in a salad nicoise but try putting a little blue cheese in it, it packs a real punch.

Not a common dish for people not from the Mediterranean but fantastically easy and quick to do on a warm Spanish day. It has, however, been attempted by a few and enjoyed by all who try it during residential rehab at Los Olivos.

Amounts will depend on how many you are making this for, just think individual portions timed by numbers of people.

 

Ingredients

  • Lettuce leaves
  • Cherry tomatoes (or sliced tomato)
  • Pitted black olives
  • Thinly sliced onion or spring onion
  • Cold previously boiled potatoes
  • Green beans, (previously cooked and cold)
  • Hardboiled egg, (1 for each person, cut in half)
  • A tine of anchovy
  • A tin of tuna
  • Olive oil
  • Lemon Juice
  • Salt and pepper

Directions

  1. Mix three parts olive oil to one part lemon juice, salt and pepper together, this is your salad dressing

  2. Put all the salad ingredients together in a salad bowl, remember to drain the tuna and anchovy and add the blue cheese if you like.

  3. Pour over the dressing and toss

  4. et Voila!
